From 7:00 AM onwards, the aroma of deep-fried kachoris and spiced potato samosas fills the air. Regulars pair them with spiral jalebis soaked in warm cardamom sugar syrup, followed by a clay cup of strong, sweet ginger milk tea.
Evening Chaat
As dusk falls, the street-side counter shifts gears to savory chaat. The crispy aloo tikkis are shallow-fried on heavy iron griddles until golden, then crushed and topped with whipped sweet curd, roasted cumin, black rock salt, and zesty coriander-mint chutney.
